This by no means a definitive list and is heavily weighted by where I live (the East Village) and my pork forward interests in ramen (less paitan or chicken based broths).

TONCHIN NEW YORK

Ramen restaurant · Midtown West

A ramen for the heads, a place that a lot of people feel more strongly about than I do, but it's still pretty good.

TabeTomo

Ramen restaurant · East Village

Former Tsujita person, mostly for tsukemen -- they do have a jiro style broth situation as well.

Mr. Taka Ramen

Ramen restaurant · Lower East Side

They have an Afuri style yuzu ramen that I actually like a lot, definitely more than the Afuri in Portland but not more than the one in Tokyo...

Ivan Ramen

Ramen restaurant · Lower East Side

A more RESTAURANT experience, but the ramens are good...

Okiboru House of Tsukemen

Ramen restaurant · Lower East Side

Newest tsukemen with very thick noodles made in house, fishy and porky dipping sauce a la Tsujita.

OKONOMI // YUJI Ramen

Japanese restaurant · Williamsburg

Best wb ramen

Nakamura

Ramen restaurant · Lower East Side

Small but very good

yelp

Ippudo

Restaurant · East Village

An always great ramen, although the lines and waiting can be insane and infuriating. But they have reservations, honestly a nice little lunch situation.

Ramen Ishida

Ramen restaurant · Lower East Side

Former Ippudo chef with a non-pork broth, but highly recommended from people I trust.

Ichiran

Ramen restaurant · Chelsea

Good for eating alone as it's just all stalls, but a nice little ramen.

Minca

Permanently Closed

Very much an OG of east village ramen, not even the best anymore, but holds a very soft spot in my heart.

Marufuku Ramen

Permanently Closed

New ramen from San Francisco, some interesting bowls -- known for exceptionally long lines in SF.
