"I visited a long-awaited rum bar on 24th Street from Thad Vogler that is finally open: Obispo. Vogler calls it the simplest and clearest expression of his vision—that spirits should taste like the places they're from—and that intent shows in the spare but elegant decor, a menu of typical foods from rum-producing regions, and a concise but meaningful cocktail list alongside 10–15 independently produced rums Vogler has visited. Executive chef Seth Stowaway helped design a food menu of empanadas, Jamaican oxtail curry, and tostones, and the bar also offers beer and wine. Named for a street in Havana where Vogler once lived, Obispo spotlights the sometimes-maligned Cuban classic, the Mojito, offering several versions as part of an effort to bring the drink back as a historically significant long drink that pairs well with spicy food. Architect Wylie Price designed the space, and a mural reproduced from Bill Traylor—installed in collaboration with SF’s Museum of the African Diaspora—reflects Obispo’s partnership with MoAD, including donations and art leases; the bar also worked with the Calle 24 Community Council to keep cocktails approachable at $9–$12. After five years in development and delays, Vogler says it’s a relief that it’s real; Obispo is open daily from 6 p.m. to 2 a.m." - Caleb Pershan
