"Set to open by late February at 1352 N. Milwaukee Avenue, the first Shabu Plus will serve rotary shabu-shabu where each patron gets a personal hot pot with a choice of Japanese broth and then plucks vegetables, tofu, or small pieces of meat off a moving belt; Tang promises more than 50 choices on the rotary as well as pre-set packages of premiere ingredients such as Berkshire pork, wagyu beef, and free-range chicken. Co-owned by Chicago operator Jason Chooi and marketing manager Duo Tang, the restaurant will also offer sweet surprises — most notably a "boba milk tea hot pot" of glistening boba pearls, fruit jellies, adzuki bean paste, and steaming milk tea — and will feature the colorful, quirky thematic decor (miniature bullet trains and race cars) that characterized Sushi Plus, again designed by Dearborn Architects. Following the debut, Chooi has secured leases for additional Shabu Plus locations at 131 S. Archer Avenue (Chinatown), 611 S.
