"I've followed Pink Bellies' evolution from a Vietnamese food truck to a pop-up, and owner Thai Phi has just finalized a lease for a new brick-and-mortar on King Street with a planned March 2020 opening. Phi says the Hoffler Place location is a perfect fit for their target market: it's positioned just outside the normal hustle and bustle, offers abundant natural light that will allow the interior design to flourish, and is ideal for late-night service.
