"I’m excited that Brendan McGill — the Bainbridge Island chef behind Hitchcock and Brucia — is opening a new Italian sandwich shop called Panino Taglio at 6003 12th Ave S in Georgetown. It will be an offshoot of his Downtown Roman-style pizzeria Bar Taglio, and the panini will be made from the same fluffy, long-fermented dough that’s crispy on the bottom and airy on the inside. Though details like a liquor license are still being finalized, McGill and partner Nahum Ochoa hope to open in early spring. The new spot will have an easy-going, pop-up feel (McGill has 18 months left on the lease), taking over the former Hitchcock Deli outpost that later housed the Georgetown Deli and Market. Expect about 5–6 different panini (not pressed), including a meatball selection, a few vegetable options, and some salads; there will eventually be beer and wine, seating for about 20 with a round marble table near the front, and an outdoor patio when the weather allows. Panino Taglio will also have a robust retail portion selling pastas from McGill’s Bainbridge Island company and deli meats, and because the concept is simple and the lease is finite, the team plans to stay flexible rather than commit to a long-term strategy.
