"Pancho’s Mexican Restaurant at Downtown Summerlin reopens for curbside pickup Friday, May 1, as well. The Mexican restaurant is offering a 15 percent discount on all food items as well as 20-ounce house margaritas to-go. The restaurant will be open Wednesday through Sunday from 11 a.m. to 7 p.m., but will reopen for Cinco de Mayo on May 5. The menu includes a burrito del mar with sautéed shrimp, genuine crab, onions, tomatoes, bell peppers, and rice, then deep fried and covered with salsa verde especial and topped with melted cheeses and sliced avocados and sour cream; pollo asado with a boneless breast of chicken marinated with achiote, garlic, and Mexican herbs, grilled Yucatan style, and served with an enchilada; and chimichanga de pollo, a flour tortilla filled with spiced shredded chicken and cheeses, then deep fried.
