"Founded 37 years ago in Japan, I found Uncle Tetsu to be arguably the most famous maker of Japanese cheesecakes—trendy, souffle-like desserts that are lighter than their American counterparts. With the Panda Restaurant Group guiding its U.S. expansion, the global bakery chain is opening its first San Diego-area shop on Convoy Street in Kearny Mesa on Saturday, December 17; it will initially operate from 11 a.m. to 7 p.m. (with extended hours to come). The shop will start by selling whole fluffy cheesecakes in original, pandan coconut, ube, and strawberry flavors and plans to add more options later, including burnt Basque cheesecakes with a caramelized exterior and custardy middle, Hokkaido-style cheese tarts, and crispy cheesecake biscotti.
