"I spotted a new food truck on campus focused on traditional Mexican fare, particularly bowls of chilaquiles; at its most basic chilaquiles are tortilla chips covered in spicy sauce and cheese, but Chilaquil also offers more elaborate versions such as the Norteño bowl with chorizo and avocado and the Chilango bowl, a vegan option with salsa verde, nopalitos, and avocado. The menu also includes snacks like bolillo bread stuffed with beans and cheese and desserts like churros and flan. The truck originally opened in May on South First but recently moved to Space 24 Twenty inside the Urban Outfitters at 2420 Guadalupe Street while remaining mobile as needed. Owner and cook Orlando Aguirre, who is from Monterrey, told Eater Austin he wanted to bring this traditional dish to Austin because he couldn't find it in restaurants and thought a truck would reach more people; he runs the operation with his wife and brother-in-law and makes biweekly trips to Mexico to stock up on authentic spices and ingredients. Chilaquil is open seven days a week from 9 a.m. to 9 p.m. and joins fellow vendors such as food truck Bananarchy and nearby brick-and-mortar spots Frank and Lucky Lab Coffee." - Erin Russell
