Chilaquiles-Dedicated Food Truck Is Now Open Near Campus - Eater Austin
"There’s a new food truck on campus with Chilaquil. Focused on traditional Mexican fare, particularly chilaquiles, the truck recently took up residence at Space 24 Twenty in Urban Outfitters, at 2420 Guadalupe Street, although the truck will still be mobile as needed. Chilaquil focuses on traditional bowls of chilaquiles, which at its most basic is a dish made of tortilla chips covered in spicy sauce and cheese. Chilaquil has more elaborate versions which are served with beans, like the Norteño bowl, which comes with chorizo and avocado, or the Chilango bowl, a vegan version with salsa verde, nopalitos, and avocado. The truck also offers other snacks like bolillo bread (similar to a baguette) stuffed with beans and cheese and desserts like churros and flan. Chilaquil was originally located out South First when it opened in May, but moved to Space 24 Twenty this month. Owner and cook Orlando Aguirre, who is from Monterrey, Mexico, told Eater Austin that he wanted to bring the traditional dish to Austin as he was unable to find it and restaurants, and thought that a truck was the best way to bring it to a lot of people. He runs the truck with his wife and brother-in-law, and makes a trip to Mexico every two weeks to stock up on authentic spices and ingredients. Chilaquil is open seven days a week from 9 a.m. to 9 p.m. It’s joining fellow food truck Bananarchy, as well as brick and mortars Frank, Lucky Lab Coffee, and forthcoming Mediterranean chain Cava, which is taking over the Mellow Mushroom space in July." - Erin Russell
