"Located at 1080 SE Madison Street inside the Hawthorne Asylum pod, I found Your Side Chicks to be Daniel Stramm’s focused fried-chicken cart: buttermilk-brined, gluten-free chicken tenders and nuggets that sit 24 hours in a brine seasoned with around 12 herbs and spices before being coated in a seasoned six-flour dredge that leans on starch flours. Stramm — who trained in culinary school, worked in Wolfgang Puck’s Las Vegas restaurants (Spago, Wolfgang Puck Bar & Grill) and previously ran Boujee Burgerz — says he wanted to hyper-focus on one product and draws on his Southern roots (a Tennessee-born grandmother and family from Mississippi). The tenders come with a choice of seasoning blends and sauces like truffle, hot honey, and black garlic ranch; combo meals include a kale slaw with lemon vinaigrette or crinkle-cut crinkle-cut fries fried very well for a crisp exterior.
