"My family gathered at a familiar spot, Happy Dragon Chinese Seafood Restaurant, where a parade of dishes followed: steamed oysters in their shell with black bean sauce (an off-menu item, you have to know to ask), fish with tofu served in a sizzling clay pot, deep-fried salt-and-pepper pork chops. But consistently my favorite thing here is what the menu calls “Japanese tofu.” I assume it’s the kind made with egg and dashi: This tofu is wonderfully custardy in the center but its toothsome exterior somehow holds firm when lightly stir-fried in sauce.
