"If you want to push the edges of crispiness, check out Smash That Burger at Rooftop Brewery in Queen Anne. The Oklahoma comes with two patties topped simply with American cheese, pickles and Smash sauce, while the Jalapeno adds (wait for it) pickled jalapenos. The smashing makes for a Maillard reaction, browning, caramelizing, and charring the meat (especially in the craggy edges) that amps up the flavor. On the side, a range of crinkle-cut fries from simple Classic to the meal-in-itself Totally Smashed Fries that comes with grilled and crispy onions, regular and pickled jalapenos, pickles, Cajun seasoning, Smash sauce, and… two smashed burger patties topped with cheese.
