Tonkotsu Ramen Opens New London Restaurant in Peckham | Eater London

"Founded in 2013 by Emma Reynolds and Ken Yamada as an offshoot of an earlier, now-closed restaurant, this group has grown into London's largest and most commercially successful ramen chain. It is best known for rich, creamy white broths, toppings such as chashu pork or karaage, and the cult-followed 'Eat the Bits' chilli oil. Backed by a £5 million investment from YFM, expansion is accelerating — a tenth London site is due to open in Peckham this September with two more sites expected by year-end — even as it navigates competition from smaller chains and well-regarded independents. Commentators expect the menu may evolve as the brand grows, with trends like mazemen likely to be explored or popularised by larger operators." - James Hansen
