"I learned that a new 24/7 drive-thru location opened in Round Rock at 130 Louis Henna Boulevard in October, bringing Taco Palenque closer to Austin. The Round Rock Taco Palenque is known for its tacos—particularly the pirata taco, made with two flour tortillas filled with grilled fajitas, refried beans, and melted cheddar cheese—and other tacos such as the matamoros (steak, avocado, and cheese on corn tortillas), fajitas, al pastor, barbacoa, and egg combinations for breakfast. The menu also includes burritos, parrilladas, enchiladas, panchos, tostadas, stuffed roasted potatoes, salsas, and soups like menudo and fideo, as well as plates such as chilaquiles, migas, flautas, and the tampiqueña (which comes with an enchilada, a hard-shell taco, fajitas, refried beans, and red rice). Everything uses house-made corn and flour tortillas and salsas. Founded by Don Pancho in Laredo in 1987, the company has grown to 30 locations across Texas, with plenty in San Antonio and a single one in New Braunfels; there don’t seem to be any Austin locations planned, and a guest relations representative said the company is “focused on expanding in different areas.” A 2017 Statesman report that the restaurant would open a food truck in Austin appears not to have resulted in a lasting presence beyond a food event." - Nadia Chaudhury
