"On the waterfront-facing strip of St‑Paul Street East in Old Montreal I discovered an inventive new “cave à manger” that opened quietly last week. The restaurant is the five-year brainchild of chef Harrison Shewchuk (Maison Publique), sommelier Samia Hannouni (Joe Beef), Ariel Goldstein, and Misha Smarsik (Philemon). True to its name — which references the botanist Gillés Clement’s idea of a “third landscape” of undeveloped natural bits — the menu is veggie-heavy and inventive, with dishes such as stuffed eggplant with anchovies, bottarga with roasted celery and arugula, lacquered parsnip, and Italian-style sautéed greens; desserts include kouign-amann and a chocolate tuile with toffee among other decadent options. I also noted an impressive list of privately imported organic wines curated by Hannouni, whom the report says strives to keep the selections affordably priced.
