"Hidden behind a secret door in the bakery's right wall, Bar Kamon is a speakeasy that aims to transport guests back to Japan in the 1920s with a Taisho-era design by co-owner Masaki Yamauchi — a look reflecting the period when traditionalism and modernism first converged and a style that also influenced the manga series Demon Slayer. I learned that Yamauchi, Ito, and bar manager Brett Grimsman researched some of Kyoto’s best bars to create a cocktail list that includes Negronis made with hojicha-infused gin and Old Fashioneds sweetened with sugar smoked on cypress wood, and that the bar will focus on Japanese-made alcohol curated by Ito, a certified sake sommelier." - Candice Woo
