"Blue Sushi Sake Grill, a sushi chain that bills itself as ultra Earth-conscious, will open a location at the burgeoning Heights development M-K-T later this year. According to a press release, Blue Sushi’s parent company, Flagship Restaurant Group, is one of the largest sushi groups to partner with the Monterey Bay Aquarium’s Seafood Watch program, which helps restaurants and chefs make sustainable choices when it comes to sourcing seafood. At Blue Sushi, that menu includes maki, sashimi, and nigiri, as well as a large sake list. Nick Hogan, CEO of Flagship Restaurant Group, said in a statement that Houston has been on the company’s radar for about a decade. The M-K-T location will be the first in the Bayou City, joining three spots in the Dallas area and another location soon to open in Austin.
