"Maya, a Mexican restaurant with coastal influences, will open at 479 King Street, Charleston, later this summer. Indigo Road tapped chef Brett Riley to head the kitchen. Riley, formerly of Casa Publica in Brooklyn, brings experience from New York-based Mexican restaurants like Dos Caminos, Empellón, and Claro. The menu will feature in-house tortillas made from Mexican corn masa, with tacos having unique identities, such as the Veracruz-style carnitas with escabeche, chicharrons, and salsa verde.
