"Opened in November and parked just off Park MGM’s casino floor, the Chef Truck is a true-to-scale El Jefe food truck realized by Jon Favreau and Roy Choi after collaborating on the film Chef; it hawks many of the dishes first seen in the movie and reflects the hands-on, kitchen-accurate approach Favreau learned while training with Choi. The menu highlights a vegetable-packed Cubano (eggplant, portobello mushrooms, grilled tofu, and salsa verde pressed between a warm, toasted butter roll) and also offers a melty grilled cheese ($12), a medianoche ($16) with roasted mojo pork on a torta, crunchy croquettes ($5), spicy watermelon with kimchi paste ($7), and a chocolate lava cake ($8). Beyond the food, the truck is worth visiting for its placement adjacent to a quaint seating area inspired by New Orleans’s Café du Monde and for two original art pieces Favreau designed—one using a mirror illusion to expand a narrow model of the truck and another video piece showing the miniature truck racing through Los Angeles with tiny anthropomorphic veggies. Park MGM handles the operational legwork so Choi and Favreau can focus on the “fun stuff,” and the truck’s hours are 11 a.m.–11 p.m. Monday–Thursday and 8 a.m.–11 p.m. Friday–Sunday." - Janna Karel
