How Jon Favreau and Roy Choi Brought the ‘Chef’ Truck to Life | Eater Vegas

"Opened in November and parked just off Park MGM’s casino floor, the Chef Truck is a true-to-scale El Jefe food truck realized by Jon Favreau and Roy Choi after collaborating on the film Chef; it hawks many of the dishes first seen in the movie and reflects the hands-on, kitchen-accurate approach Favreau learned while training with Choi. The menu highlights a vegetable-packed Cubano (eggplant, portobello mushrooms, grilled tofu, and salsa verde pressed between a warm, toasted butter roll) and also offers a melty grilled cheese ($12), a medianoche ($16) with roasted mojo pork on a torta, crunchy croquettes ($5), spicy watermelon with kimchi paste ($7), and a chocolate lava cake ($8). Beyond the food, the truck is worth visiting for its placement adjacent to a quaint seating area inspired by New Orleans’s Café du Monde and for two original art pieces Favreau designed—one using a mirror illusion to expand a narrow model of the truck and another video piece showing the miniature truck racing through Los Angeles with tiny anthropomorphic veggies.
