"After a December beta with Montrealers, I learned Dreamy Coffee Supermarket is launching as a weekend-only venture inside the Canadian Roasting Society that pairs the city's largest retail selection of freshly roasted coffee with a café and a bakery doing Southern-style biscuits. The team plans to stock anywhere from 14 to 18 different roasters at a time, with head barista Vassily Lissouba curating a regularly refreshed lineup based on what people ask for, what they're excited about, and ways to get customers curious; everything sold is freshly roasted and unsold beans are redistributed to cafés and mailboxes on Monday. On the food side, the biscuits—developed through methodical A/B testing by baker Missy Hansen Murphy—are served with seasonal jams and a viscous sweet cream, and the team highlights how the biscuit's salt and fat amplify coffee flavors from fruity to roasted chocolate.
