"Opening this spring 2023 at 135 India Street near Manhattan Avenue, Radio Bakery will be led by Rolo’s pastry chef Kelly Mencin, who joins the venture as an owner. The team describes the bakery as “New York-style,” pulling from various influences and the owners’ backgrounds, and I’m told it will focus on viennoiserie techniques alongside other baked goods: a passionfruit morning bun; a spicy Italian croissant filled with ’nduja, Calabrian chiles, and Parmesan; Rolo’s focaccia; a double chocolate croissant filled with ganache; and daily rotating sourdough breads. The space will have a few stools and operate mainly during the day (with possible nighttime events explored later), and the name comes from the roll gate on the India Street space — originally thought to be from a radio station but actually tied to a television company — a fitting nod given its proximity to Transmitter Park. Ahead of the opening the team is planning pop-ups with the East Village’s Claud (January 30) and at Leo pizzeria in Williamsburg (February 11); Mencin says she’s looking forward to being near the Greenpoint Avenue G train station and will be mainly at Radio Bakery while continuing to oversee pastry at Rolo’s." - Emma Orlow
