"A KFC biscuit is central to my story: it captured my father’s first bite in America after stepping out of Hartsfield-Jackson International Airport in 1983, and years later, when I flew to Korea as a kid, a KFC biscuit there would also remind me of that same first taste back in the motherland. I used that biscuit as a recipe excerpt while promoting my book, but when a magazine editor told me they wanted something "more Korean"—saying implicitly they could only devote space to one Korean American food writer at a time—I withdrew from the issue.
