"Technically, Denver chef Lon Symensma’s newest restaurant, LeRoux, will serve food from across the European continent when it opens on December 28 at 1555 Blake Street. But with that name, the chef’s classical training, and promises of an after-dinner cheese cart rolling around the restaurant, LeRoux is very likely to make a big splash on the city’s now growing fancy French dining scene, just in time for New Year’s. If it’s any indication, Symensma wants LeRoux to generate fandom for its foie gras in the same way that his perpetual hotspot ChoLon has done so for soup dumplings, the chef told the Denver Post. Though menu details are still sparse, he’s been recipe testing an Alsatian lamb choucroute garnie with Merguez sausage and sauerkraut, as well as some oyster and foie gras skewers with truffle.
