"A group of Kiwis are bringing a taste of New Zealand to University Heights with a brewery and restaurant scheduled to launch this fall; the name honors two small towns on New Zealand’s South Island where co-owner Shanan Spearing and his partners are from. The project has begun construction to open up and extend the Mueller Center building at the corner of Park Boulevard and Madison Avenue, with local architect Jason Maune adding a rooftop level to the 1920s structure. The ground floor will house the main dining room, a bar area and Kairoa’s 10-barrel brew system, while the top floor will offer additional seating, an event space and games. Longtime brewer Joseph Peach will oversee the draft handles, with offerings ranging from New Zealand–inspired pilsners to traditional English and German styles, IPAs, barrel-aged stouts and mixed-fermentation beers; Kairoa is partnering with hop growers in New Zealand and will brew experimental beers on a small pilot system, alongside some guest pours." - Candice Woo
