"At 640 St-Paul West, just near McGill Street, the new bar Stilllife opens today as a larger, more versatile project from the owners of Bar Cloakroom: with room for 125 people it will cast a wider net than the small, very cocktail-focused Cloakroom. It began as an apertivo-style idea—amaro- and vermouth-focused—but will also offer a robust beer and wine program and light, booze-friendly bites like charcuterie and cheese; the full cocktail list will run to about 29 drinks. Sustainability and low-waste practices are central to the concept: citrus is processed into a cordial and fermented with a kombucha scoby to keep the juice an extra 10 days for a slush daiquiri that will be one of the signatures, orange peel oil is extracted for old fashioneds instead of holding large orange stocks, and the team plans to push seasonal, low-waste approaches further. Prices are approachable for Old Montreal (cocktails start at $8, mostly $12–$15), taps will include Beau’s, Farnham and Basque-style ciders from Cidrerie Le Sonambule, and the 2,400-square-foot space—designed by Alain Carle—uses concrete construction and a large metal-and-glass partition so it can be split if needed and works well for groups.
