"After Sassetta’s 2020 closure left a chic Italian hole in Dallas, I was excited to see it return inside The Joule hotel in the former Americano space with an interior renovation envisioned by A-list designer Jean Liu. Under executive chef Jason Zygmont—who worked with Hugh Acheson, Linton Hopkins, Kevin Gillespie, Victoria Blamey, and Thomas Keller and who previously opened Setsun in Nashville—Sassetta 2.0 is a spiritual successor to the original: it retains a few carryovers but expands beyond Italy into a wider Mediterranean palate (Spain, France, Northern Africa and the western edges of the Middle East) and aims to be more polished and grand while keeping the soul of the first incarnation. The menu features items like black pepper bucatini and burnt honey–topped pizzas; my top picks include the agnolotti and a very clean, simple Wagyu tartare—hand-diced and flavored with lemon juice, a peppery olive oil, Parmesan, parsley and a touch of horseradish—served with pizza dough brushed with garlic oil and black pepper and baked to perfection. Jason’s team includes sous chef Nathan Goins, who brings experience from Germany and DFW kitchens, and general manager Haydee Hernandez, a decade-long Headington group veteran, and Headington Cos. “rolled out the red carpet” for the chef.
