Top Chef’s John Tesar Goes California Seafood at OC’s New Outer Reef - Eater LA
"Chef John Tesar will open Outer Reef, his long-discussed seafood restaurant. The place is meant to act as an homage to Tesar’s former Spoon Bar & Kitchen, featuring a variety of seafood dishes including razor clam tartare, geoduck sashimi, and dry-aged tuna. The restaurant will also offer shareable spot prawn ramen, roasted half lobster, kimchi-glazed halibut, and black cod milanese. Chef Jayro Martinez will be the chef de cuisine. The restaurant's opening has been delayed but is now set for April 29, as part of a larger renovation of the Dana Point hotel property." - Farley Elliott
