"Opening at 610 SE Morrison Street, Pop Pizza will give away whole pies Wednesday, August 12, and opens the following Thursday, selling whole pies through its website for pickup; for now customers can only order whole pizzas online, with vegan and gluten-free pies available starting Thursday. The shop takes a pastry-chef approach—obsessive R&D on flours, mills, starters, and hydration—to create a style that’s its own but closest to Detroit: a thick base with cheesy, crunchy salty edges and a noticeable, distinctive crust, a nice crunch on the bottom, and a very light, delicate interior that isn’t super hollow or full of big air pockets.
