"I'm excited that Cava is adding San Diego with a new Encinitas outpost opening Monday, October 1; it's the brand's 67th location nationwide and one of 10 in Southern California. Founded in 2011 by childhood friends Ted Xenohristos and Ike Grigoropoulos with executive chef Dimitri Moshovitis, the fast-casual Mediterranean concept serves a highly customizable menu of salads, pita breads, and grain bowls with more than 50 varieties of dips, proteins, toppings, and sauces. The 2,684-square-foot, 52-seat Encinitas restaurant will be open daily from 10:45 a.m. to 10 p.m. and launches with the brand’s new fall menu that includes seasonal roasted vegetables like Brussels sprouts, butternut squash, carrots, and cauliflower, plus a Greek minestrone soup. There’s a pre-opening event on Sunday, September 30 with free lunch (10:45 a.m.–1 p.m.) and dinner (5 p.m.–7 p.m.)—diners will be encouraged to donate to The Ecology Center, which will be on hand conducting gardening lessons and creating an edible garden pop-up.
