"Debuting in the overlooked southeast, Hana Ramen offers a casual, value-priced menu built around "made from scratch" noodle dishes. Taking over the 1,200-square-foot former home of Gyro Time at the McCarran Marketplace on the northern end of the retail center near the intersection of Eastern Avenue and Russell Road, it’s a new quick-serve neighbor to China Dragon and Hawaiian Barbecue and has an interior that wouldn’t look out of place on Spring Mountain Road. The menu currently features eight ramen bowls with choices of thin and thick noodles, from an $8.50 shio ramen made with chicken broth and pork belly to a $13.95 "meat lover" with spicy miso ground pork and "back fat," plus an $11.95 "hell ramen" served "extra spicy"; all bowls can be upgraded with extra toppings. Also offered are $5.95–$6.95 rice bowls (including chashu fried rice, chicken or pork) and appetizers such as shrimp tempura, fried octopus ball, pork gyoza, seaweed salad, and agedashi tofu." - Bradley Martin
