"Built as an aged-wine and focaccia bar with a menu focused on fermentation, this narrow, candle-lit, vinyl-driven spot at 155 Avenue B frames older wines as approachable rather than precious or prohibitively expensive. Every wine poured by the glass is at least 10 years old, with a list assembled by partner and wine director Drew Brady that draws on overlooked back vintages from importer cellars and distributor warehouses, spanning oxidative whites, aged rosés, skin-contact wines, and big reds that have softened and opened up; at this bar, those bottles aren’t an exception, they’re the point, and they’re kept fresh using Coravin technology. The brief vegan food menu complements the wines, centered on focaccia and layered with fermented sauces, vinegars, and infused oils, alongside dishes like arancini with truffles, lacto-fermented fries, radicchio salad, and hazelnut cake. The room stays intentionally unpolished and low-key, with a long bar and playlists leaning on jazz, soul, and familiar records, and it opens Wednesday through Sunday, from 5 p.m. to midnight." - Melissa McCart
