"The Fairmont Olympic has two flagship restaurants, and both are open from 1 to 8 p.m. on Christmas Eve and Christmas Day. Shuckers is on the 4th and Seneca side of the Fairmont Olympic Hotel, with a ton of dark oak to go along with the seafood, making for a timelessly scenic way to celebrate. Inside the hotel from the University Street entrance, The George is no less extravagant than Shuckers but with a distinctly lighter aesthetic of an ivory-toned neoclassical base with colorful modern accents.
