"Whole Sol Blend Bar, located in the Union Station neighborhood, offers a superfood-focused menu that is all organic, gluten-free, and dairy-free. The cafe features signature smoothie bowls, toasts, and cold-pressed juices. The 25-seat space is decorated with colorful photographs and hanging greenery, and the majority of the menu is prepared in front of customers at the bar. Whole Sol also plans to launch a second location in Boulder and operate a sprinter van around Denver later this summer." - Gigi Sukin
