"Opening at the Linq on the Las Vegas Strip in early 2022, this 1,400-square-foot, marketplace-inspired casual concept (designed by New York’s Celano Design) combines indoor seating with grab-and-go options and counter-service ordering. The menu channels New Jersey and New York neighborhood delis and markets, with baked breads, Italian sandwiches — including a Valastro with smoked pancetta, rosemary ham, and Caprese on Jersey focaccia or East Coast hoagies like Jersey beef — and house salads such as Pop’s panzanella and the Hoboken chop. A pizza counter will serve Grandma Squares in renditions like Margherita, pepperoni, and a signature supreme square, while a dedicated Mozz Bar offers house-made fresh mozzarella served with warm rustic bread and toppings (basil pesto, roasted peppers, tomato-olive relish, or tomato with fresh basil and aged balsamic). An open kitchen will feature a Mutz Masters team led by the chef’s father-in-law pulling mozzarella, and the menu was developed with corporate executive chef Bryan Forgione (formerly executive chef at Buddy V’s Ristorante).
