A Filipino Bakery JP Makes and Bakes Will Open in Detroit’s New Center Neighborhood | Eater Detroit
"Launching soon in Detroit, JP Makes and Bakes will occupy 6529 Woodward Avenue, Suite B in a former clothing boutique and operate from a roughly 1,400-square-foot, mostly white-boxed space with a small closet to be removed; Peregrino has a five-year lease from the Shoppes at Woodward with options to renew. After trading a 15-year corporate sales and marketing career for pastry school in the Philippines in 2018, Jonathan Peregrino—who was a Hatch Detroit semifinalist—has built a following through pop-ups and collaborations (including a sold-out dinner series with Folk in May 2023) and was awarded a $60,000 Motor City Match grant to help outfit the bakery. The build-out will include a hood, refrigeration, cooktops, ovens, and a fryer, with Push Design LLC handling architecture and Walcon Inc. the construction; the kitchen will be an open concept similar to Sister Pie or Forest, and the front will offer limited seating for about 10. The menu will feature his popular cookies, brownies, chocolates, and bread rolls flavored with traditional ingredients like ube, a full coffee and espresso bar, and a rotating selection of savory, no-frills entrees inspired by his Filipino childhood (including rice bowls a couple days a week); Peregrino hopes to clear inspections by July or early August and open soon after." - Serena Maria Daniels
