"Limited dining options have become a persistent problem in South Loop, so the early 2024 debut of Signature — an upscale sports bar and restaurant from chef Stephen Gillanders (S.K.Y., Valhalla) — was met with fanfare in the area. Gillanders shares ownership with former Chicago Bears defensive end Israel Idonije and is serving menu items like short rib nachos with cherry tomato pico de gallo and smash burgers with American cheese and yuzu pickles.
