"This 130-seat Kansas City bistro, which once did roughly $10,000 a night, pivoted to selling groceries, family-style meals, and alcohol for pickup when dine-in stopped and saw sales fall to about $1,000 a day. After Missouri allowed limited reopening on May 11, the restaurant did around 70 covers on a recent Saturday and was able to rehire all kitchen staff who wanted to return, but bringing back front-of-house staff has been harder: some servers declined shifts out of health concerns or because they pursued other paths such as college or different careers.
