"I learned that Bomba PDX is Rivera’s small-batch Italian doughnut pop-up focused on brioche-like bomboloni (also called bombolones), named to evoke “little bombs” and shaped like a classic round cartoon bomb; he produces monthly pre-ordered four-packs ($15 per box) via Venmo, promoted on Instagram @bombaPDX, and his first batch sold out with pick-up at Scottie’s. The doughnuts are made in a process similar to pizza dough—dividing, balling, proofing, and frying—and include vegan options that use aquafaba in place of eggs.
