"Opened on E Pike in Capitol Hill despite the challenges of launching during the COVID-19 pandemic, La Josie’s — the sibling to neighborhood favorite Fogon Cantina Mexicana — officially debuted after public previews. It had been in the works since last year and was delayed by Washington’s stay-at-home order; now, under Seattle’s phase two rules the bar will operate at 50% capacity with a full food menu and table service, offering limited indoor and sidewalk seating but no takeout. The food menu focuses on Mexican comfort dishes like tortas, sopitos, tortilla soup, and prawns in the house’s spicy “diabla” salsa, while drinks are the primary focus with an extensive margarita selection (including a tamarind version and one made with smoky El Tesoro Select), a spiked horchata with vanilla rum and Kahlua, and a rotating selection of tequilas infused with seasonal flavors. La Josie’s took over the spot recently vacated by East Trading Company, brings a relaxed vibe similar to Fogon, features an eye-catching mural on one wall, and is operating temporary hours of 4 p.m.–11 p.m. Monday–Wednesday, 4 p.m.–midnight Thursday–Saturday, and noon–10 p.m. Sunday." - Gabe Guarente
