"Operating out of a small back room at the existing Le Marais location on 18th Street, I can step up to a new window (to the left of the entrance) to order warm crepes to go from a ledge framed by blue-and-gold shutters and sign; it opens October 5 and will serve daily from 8 a.m. to 5 p.m. Patrick is debuting a streamlined menu of four savory buckwheat crepes, four sweet white crepes, and one special, including the fan-favorite “complete” with good ham, gooey Gruyere, and a framed egg; woodsy mushrooms with creamy chevre; smoked salmon with fragrant dill; the housemade Nutella (the biggest hit on the sweet side); and the namesake Aurelia smeared with caramel and sprinkled with Speculoos crumbs. He’s even testing a savory-sweet crossover using buckwheat batter folded with dark chocolate and spiked with espelette pepper, and after many tests confirmed these are traditional, unleavened Brittany-style crepes rather than sourdough.
