Le Cirque at the Bellagio Will Reopen October 28 - Eater Vegas

"Las Vegas French fine dining icon Le Cirque is, at long last, reopening October 28, with new executive chef Dameon Evers at its helm. The fountain-side Bellagio restaurant has been closed since March 17, 2020, when Nevada first mandated all casinos, resorts, restaurants, and bars in the state shut down to stem the spread of COVID-19. On June 4, 2020, the state allowed casinos to reopen, albeit with restrictions, and just shy of a year later, on June 1, 2021, those in Clark County were given the go-ahead to return to 100 percent capacity. Nearly all of Bellagio’s dining establishments, including its buffet, have since reopened — but not Le Cirque. Steering Le Cirque’s much-anticipated reopening is California chef Dameon Evers, who brings some noteworthy pedigree from an eight-year stint under Thomas Keller at defunct Beverly Hills restaurant Bouchon, plus time at Gordon Ramsay’s West Hollywood restaurant, and Michelin-starred seafood spot Angler, among others. Le Cirque at the Bellagio, an offshoot of the original famed New York City establishment of the same name, opened in 1999, with an extravagant, multi-colored circus tent-like interior and French tasting menus featuring now-iconic dishes like its lobster salad and potato-encrusted sea bass.
