"Near Theater Row in Manhattan, I found a cozy, three-generation Bruno family–run French restaurant where cherries jubilee has been on the menu since the emigres from Nice took over in 1982. Now in her 70s, second-generation Elyane Bruno still follows the recipe her mother Marguerite introduced; dressed in a black vest and white shirt she brandishes her mother’s original copper saucepan and says, “I’ve made so many over the last forty years, I’ve lost count.” Once the liqueur is lit there’s reliably an audible gasp of delight from diners." - John Tsung
