"Among the more surprising takeout pivots in Seattle since the stay-at-home order, the acclaimed, upscale Ravenna sushi restaurant Wataru is offering 10-piece omakase dinners and chirashi bowls for takeout (and sake bottles to-go) at $40 per person, reservable via Tock — the first time the restaurant has ever done takeout. The minimalistic spot, which opened in late 2015 with an artful Edomae omakase approach that often cures, marinates, or pre-seasons fish, translates that style into takeout with seafood prepared by soy dashi zuke, apple or straw smoke, yuzu sesame marinade, pickled in red vinegar, and seared; the chirashi includes assorted sashimi over sushi rice with shiitake mushrooms and Ariake seaweed. Chef Kotaro Kumita, who trained under Shiro Kashiba, built Wataru into one of Seattle's most sought-after omakase experiences usually booked months in advance, though reservations are now simply a Tock click away, and it remains to be seen how long the service will last." - Gabe Guarente
