"Opening on the Lincoln Park and Lakeview border, Strapoli Pizzeria and All-Day Cafe is a family-run project led by Marcial Bereciartu and his parents that intentionally relaxes strict Neapolitan rules: customers can build their own pizzas and the shop will offer takeaway and delivery. Each pie is about 10 inches and is baked 90 seconds in a 900-degree oven; the crust is dairy-free, and Bereciartu plans to use vegan cheese from his childhood friend Daniel Briceno’s Fons to avoid common melting and texture problems — he’s confident in that product.
