"One doesn’t just stop into Sky Bistro for lunch. Mainly because the panoramic restaurant is perched 7,510 feet into the sky, at the top of the Banff gondola. The view from Sulphur Mountain alone makes the ride worth it, but the hyper-Canadian menu is an equally enticing draw. Ask politely for a seat by the window — the restaurant offers majestic views of six different mountain ranges — and tuck into Canadian clams and Kuterra trout in a creamy seafood chowder, locally-farmed bison chopped into a delicate tartare and served with crackers made from red fife wheat (one of Canada’s heritage grains), or seared Ontario duck breast (and foie gras) from Ontario’s King Cole Ducks served with Alberta grains. For a perfect day, stop into Banff’s Sky Bistro after an afternoon tea at the Fairmont Chateau Lake Louise." - Kate Dingwall
