"Set to open at 300 S. Logan Street, the new Denver outpost of Fire on the Mountain brings the Highland wing spot’s psychedelic, Grateful Dead–inspired vibe and a mostly identical menu to the original with the addition of two new sandwiches—the Cousin Vinnie (chicken tenders) and Joe’s Chicken, Bacon Ranch. The focus remains on wings, offered as traditional fried bone-in with a choice of 12 sauces, while vegetarian and alternative options include lightly fried seitan strips, battered-and-fried cauliflower wings and boneless chicken tenders; salads, burgers and munchies like French fries, mozzarella wheels and nachos round out the menu. The space is one large, more open dining room with two large garage doors that will open on nice days, drink rails along the garage doors in lieu of a full patio, several TVs for watching sports, and a large interior mural featuring faces of rock musicians including David Bowie, John Lennon, Eric Clapton and members of The Grateful Dead. A full bar will offer 16 rotating taps emphasizing craft beers (alongside “good whiskey and vodka” but not “fancy cocktails”), and the restaurant will use the Highland location’s modified hostess service—guests are seated by a hostess but order at a counter and have food brought to their table—to better manage crowds. The restaurant occupies a renovated ground-floor space in the old Trevino Mortuary building, which will include nine apartments and other tenants, and is run by founders Craig Oberlink and Andrea West, who launched the brand in Portland in 2005 and opened in Denver in 2012." - Paul Albani-Burgio
