"Restaurant group Uchū Hospitality found a new home for the concept in a shared space alongside a fifth location of Uchū’s affordable, well-liked Sushi on Jones chain, at Gotham West Market, one of the fancier food halls in the city, located in Hell’s Kitchen. Both concepts share a 10-seat stall at Gotham West and somewhat of a joint menu. Customers can make a reservation for a swift 7-course or 12-course omakase, same as at any other Sushi on Jones location, and have the option of ordering off the Don Wagyu menu during the meal. For those who don’t book a reservation to eat at the stall, Don Wagyu’s menu items will only be available at the takeout window, along with a selection of Nigiri sushi and Maki rolls from Sushi on Jones." - Erika Adams
