"I discovered a pop-up of Park Boulevard’s Plumeria Vegetarian has opened in Encinitas, operating out of the former Siamese Basil space on South Coast Highway while owner Pimwara Thongchua prepares a larger remodel; after a quick refresh the dining room is currently open as the Plum pop-up for lunch from 11 a.m. to 3 p.m. and for dinner 4:30 to 9 p.m. on weekdays (until 10 p.m. on weekends). Thongchua, who also runs Chi Extraordinary Kitchen, Thai Joint on Adams Avenue, and Hillcrest’s Asian Bistro, expects to keep the pop-up for a few months while awaiting permits, then close for about a month for renovations and officially reopen as Plumeria Encinitas. In the meantime the eatery intends to donate all of its profits, splitting proceeds between local charities chosen by diners and a Thailand-based charity that raises funds to buy medical equipment for hospitals there." - Candice Woo
