"Established in 2003 by Nancy and Steve "Bear" Bishop and located in a remote, heavily forested spot on the east side of Discovery Bay, this was the state's first certified organic cidery and is home to more than 800 heirloom apple trees spanning American, English, and French cider varieties with a particular focus on early- and late-season bittersharps and bittersweets. The operation engineers ciders to showcase the unique flavors of each apple variety, producing distinctive small-batch releases across the spectrum — examples include the scrumpy Pirate’s Plank Bone Dry, the limited-release Burnt Branch Reserve, and a rosé-style Discovery Trail (a portion of proceeds supports maintenance on the Olympic Discovery Trail) — and also offers a series of intensely smoked ciders. The garage-like tasting room pours flights and glasses for sipping indoors or out among the orchard, offers a small menu of organic snacks, and invites guests to bring picnics and dine alfresco in the wild, woodsy estate." - Meg van Huygen
