"A casual chain originating in South Korea, Bonchon will open two new Twin Cities outposts in buildings that once housed Italian joints: Uptown Davanni’s and Dinkytown’s Vescio’s (the latter closed in February after 60 years). I'm told the Uptown location is slated to open in July, with the 3,200-square-foot Dinkytown spot following in late summer. Bonchon is known for a variety of Korean items but is especially notorious for chicken wings coated in a sticky soy glaze and for its extra-crispy, double-fried approach; you can also expect Korean staples like bibimbap. Both locations are being financed by Sam Zheng, who operates several buffets around the metro (including Royal Buffet in Richfield), and the deal was facilitated by Marshall Nguyen of the Edina-based Caspian Group.
