"Tucked a couple of blocks south of Promenade Ontario across from Théâtre Denise-Pelletier and beside Parc Morgan, this hybrid café-meets-wine-bar opened on May 25 by partners Paul Tran and Olivier Trudeau and aims to be a low-key, eco-conscious hangout with wine served on tap. With 12 taps behind a central island counter—wines mainly European for now and selected by sommelier Sydney Auger—Supernat uses stainless-steel kegs to reduce waste and avoid oxidation, and also offers beer and cider from neighbours Avant-Garde and Fleuri. Daytime service focuses on coffee made with beans from local roaster Zab (espresso standards plus pour-over) and lattes made with matcha and hojicha, alongside snacks like a tamago sando with kimchi from Cham! k.cuisine, cookies from Trudeau’s girlfriend, and pâté chaud from Tran’s mom. Evenings introduce Asian-influenced sandwiches developed with chef Mathieu Bourdages—barbecue pork bánh mì, a salmon sashimi sandwich with wasabi mayo, and three grilled cheeses (one with pulled pecking duck, one with ajitsuke tofu, and one with goat cheese, Asian pear, sesame seeds, and a honey sambal oelek coulis) on Hokkaido milk bread, priced $9–$13. Cocktails by mixologist Maximiliano Vallée Valletta include a Japanese highball with rum, lemongrass and calamansi syrup, an espresso coconut martini, and a Negroni topped with beer foam. Interior work by MRDK preserves some brick walls and a dangling orange light fixture, adds light wooden furniture, minimalist Japanese touches and retro pieces, and there’s a 20-seat terrasse that looks out to the street. The team plans educational events with local roasters and winemakers to highlight overlaps between coffee and wine and to bring a farm-to-table approach to a beverage-focused business; hours are 9 a.m. Wednesdays to Sundays (closing 4 p.m. Wednesdays and Sundays, 10:30 p.m. Thursdays and Fridays, and 7 p.m. Saturdays)." - Valerie Silva
